Located in Hotel NH Aranzazu, this is a restaurant serving typical Basque cuisine.
It has been over a year since Martín Berasategui, the genial San Sebastian chef with three Michelin stars took over the reins at Hotel NH Aranzazu’s kitchen. Under his direction, Iñigo Lavado creates a modern cuisine overflowing with flavours and using good prime ingredients, carefully selected for cooking of this type. His recipes are clean, provocative, challenging, bordering on technical perfection.
Lavado pulls off dishes such as small vegetables with artichoke broth and snow of pods; cream of tender almonds; jowl of ibérico pork with lemon jam; warm salad of chestnuts and tender garlic and salt cod with roasted red peppers. For dessert, vanilla flavoured banana cake with lemon ice cream, or beer ice cream with reduced orange juice.
An impeccable menu of haute cuisine is available daily for 17 € and a ‘menú degustación’ (taster menu) containing the restaurant’s most representative dishes is available at 42 €. Lunchtime, cocktail and banquet menus all come with the unmistakeable stamp of Martín Berasategui. The large windows and décor of light beige-coloured wood convert the eating area into a pleasant, warm and luminous space. It has a carefully chosen and up to date wine list.
